This is one of my all time favorite and most used recipes. I use it to make a healthy version of “cereal” or add eggs to make a hearty and delicious pancake!
1 TBS Chia Seed
2 TBS Buckwheat Groats
1 TBS Hempseeds
2 TBS Dried Fruit of Your Choice
2 TBS Chopped Nuts of Your Choice
Cinnamon to Taste
Nutmeg to Taste
Dash of Sea Salt
Take mixture and place in a bowl with ½ c of a milk alternative (almond, rice, coconut etc.) of your choice. Allow it to sit and soak for 2-3 minutes.
Heat a skillet on med-high heat with 1 tsp. of coconut oil. Add 2-3 eggs to recipe above, mix well and pour all contents into skillet. Cook for 2-3 minutes on one side, cut pancake into 4 sections before flipping, cook for another 1-2 minutes on the other side. Remove from heat and top with almond butter. Yummy!
